I love simple meals that don’t skimp on flavor, and these chorizo meatballs are one of my go-to recipes. Packed with bold spices and flavor, they’re easy to make and versatile enough for any weeknight dinner.
I like to serve them with roasted corn or sautéed peppers alongside some cilantro lime rice and homemade Guacamole for a complete, satisfying meal. The best part? You can cook these meatballs on the pellet grill for that smoky kick or in the oven if you’re looking for convenience.
Either way, they’re a guaranteed hit! I have a family of 7 so of ease I gave you the 2-4 serving version but I normally triple or quadruple this recipe. Also note I always season to taste, so if your family likes more or less of a specific seasoning definitely customize!
Ingredients:
- 1 lb ground pork or beef
- 1/2 lb ground chorizo
- 1 egg
- 1 small onion, finely diced
- 2 garlic cloves, minced
- 1 tsp smoked paprika
- 1 tsp ground cumin
- 1/2 tsp dried oregano
- Salt & Black pepper to taste
- 2 tbsp fresh parsley, finely chopped
- Olive oil
Instructions:
- Preheat your oven to 400°F
- In a large mixing bowl, combine all ingredients. Mix until evenly combined.
- Shape the mixture into 1-inch meatballs and place them on a parchment-lined baking sheet.
- Lightly drizzle the meatballs with olive oil.
- Bake in the preheated oven for 20-25 minutes or until cooked through (internal temperature of 165°F).
If using the pellet grill preheat to 400, place pan on the grill grates and follow the same procedure.
