Dispersed camping in George Washington & Jefferson Natl. Forests

I’ll be traveling through the area of George Washington & Jefferson Natl. Forests early in May, and I’ll have about a week to kill before I need to get home for work.

It appears that there are ~8 general areas that allow dispersed camping, shown here – https://www.fs.usda.gov/activity/gwj/recreation/camping-cabins/?recid=73539&actid=34

For anybody that’s been out there, can you offer recommendations for which of those areas are particularly nice? I’ll have my dog with me, and the plan is to do a lot of day hiking, but also probably some driving around to see things. I’m interested in neat ecosystems, pretty trails, water features, views, etc. You know, the good stuff!

As for the camping itself, in these particular forests, what’s the best way to find good sites? Are previously used sites generally pretty visible from the forest roads?
