I’m a noob, can I overland Central C.A. to the PNW in a Crosstrek??

Hi! I have lost my damn mind during covid. I need to get into nature more, I want to do that in an SUV that I can sleep in. I am 5'4" so I don't need a ton of length, and my recreation gear will be books and art supplies, so probably not a lot of space needed.

I probably wouldn't be going anywhere too difficult, in fact I would love suggestions for good locations in those areas!

My concerns are getting stuck in the mud, and the CVT issue. For the former I think Mud tires and maybe a lift would be fine, but as for the former the 2018 Crosstrek I am looking at has manual paddles, but id have to learn how to use them… Am I going to get stuck on an easy-moderate trail visiting these kinds of places?

P.S. I only have street parking, on somewhat narrow streets, so size is an issue.
